We will explain a short and conceptual proof that the category of coherent sheaves on a toric variety is equivalent to a certain partially wrapped Fukaya category.  In fact the mirror is naturally constructed over the course of the proof, rather than needing to be posited in advance.  The argument uses the modern machinery around (partially) wrapped Fukaya categories, which we will begin by reviewing.
